A favorite recipe of Chef Andy Hopper at Chefs 105 Oyster Bar Morehead City, N.C.
Ingredients 6 N.C. oysters 1/2 pound butter 2 oz of chopped dill and parsley Parmesan cheese Fresh lemon juice Dash of hot sauce
Preparation Mix the butter with chopped dill and parsley. Place oysters on grill or in a broiler for one minute. Top with grated parmesan cheese and herb butter mixture. Flames are ok to help melt the cheese. Once the oysters are bubbling in the shell, squeeze fresh lemon juice over them with a dash of hot sauce.
