42d Street oysters

42nd Street Baked Oysters

A favorite recipe of Chef David Greenwell at 42nd Street Oyster Bar
Raleigh, N.C.

 

Ingredients
2 sticks of butter, softened
3 1/2ounces of grated parmesan cheese
5 ounces of bacon..diced, cooked crispy and drained
2 ounces plain breadcrumbs
1 tsp chopped fresh parsley
pinch cayenne pepper...or to taste
pinch white pepper
2 cloves minced fresh garlic
1/2 tsp paprika
1/2 tsp cajun spice (blackened redfish seasoning, avail at the grocery store is fine for this)
10-12 oysters depending upon size

Preparation
Mix all ingredients together with a mixer until well combined.Refrigerate overnight or at least 4 hours.

Shuck 10 or so fresh oysters (the salty delicious ones from Stump Sound or Harkers Island here in N.C. would be great for this).Top each oyster with a layer of the butter mixture about 1/2 inch thick.Bake in a 450 degree oven until nicely browned...about 7 or 8 minutes.Garnish with lemon if desired and enjoy immediately.
