The food service industry generates many tons of waste annualy in North Carolina. Inedible food waste from kitchen preparation and uneaten food scraps make up about 11 percent of waste going into landfills. Restaurants consume a tremendous amount of water in the kitchen and in the front of the house. They also consume large amounts of energy.
